Holiday Recipe for National Bake Cookies Day

Festive table setting with Christmas decorations on wooden tableTis’ the season to eat, celebrate and be merry, but today we embrace holiday eating and indulgence with National Bake Cookies Day. To get into the holiday spirit, Sundial Resort Chef Menassa has revealed her favorite baking recipe: “Thumb Rum Balls.” Try this tasty holiday baked recipe and celebrate with us at home by whipping up this sweet and festive treat.

BAKING DIRECTIONS

  1. Preheat oven to 350. Coat a 12-by-17-inch rimmed baking sheet with pan spray; set aside. Melt butter and chocolate in a small heatproof bowl set over a pan of simmering water, stirring occasionally. Set aside.
  2. Whisk together eggs, brown sugar, vanilla, and salt in a large bowl. Stir in chocolate mixture, slowly fold in flour. Pour batter into prepared baking sheet. Spread evenly with a rubber spatula. Bake until done. Let cool completely.
  3. Break up brownie into small pieces; transfer to the bowl of an electric mixer fitted with the paddle attachment. With machine on low speed, pour in rum, and mix until crumbs start to come together to form a ball.
  4. Place 1-cup of your favorite nut into a Robo-Coup and pulse until small pieces have formed.
  5. Shape into 1-inch balls, and roll in the chopped nuts to coat. Transfer to a baking sheet; refrigerate, uncovered, until cold, about 2 hours. Press your thumb into each ball prior to serving and Serve chilled or at room temperature.
